Favorite Caribbean Meals

 


Across the globe, there are many who adore the Caribbean. They have images of paradise on their computers and devices the places where we live on a daily basis. 

Sometimes we who live in the region appear to take our environment for granted. The lovely weather, the relaxed lifestyle that is all around us, and yes the food, family, friends and fun. 

When speaking of food, most countries have several favourites, however here we will seek to feature one from each as we have information. Feel free to explore other sites to get additional information so that you have an authentic Caribbean experience when you visit. 

In Barbados, you can find some variations of cou cou and flying fish. The cou cou is generally made with cornmeal and okras, some people however prefer to make it with breadfruit. The flying fish may be fried or steamed. The meal is a hearty and filling one. Some Bajans even have specific days for cou cou when they cook on a weekly basis. The pictured plate is generally how the locals would have it, complete with the vegetables like pickled cucumber, avocado, and such. 

Trinidad and Tobago also has their favourite steeped in their history with the Spanish from way back in the 1500s. Callaloo and Crab - The callaloo is made with dasheen leaves. cooked with a variety of herbs and spices. There are a variety of ways of eating it - like a soup, with rice or over macaroni pie. When you combine these ingredients, you'll likely transport your tastebuds to The Bahamas. These ingredients create a tasty treat that is a hit among most who partake; listed as peanut oil for frying, minced conch, garlic cloves, flour, cornmeal, milk, eggs, paprika, cayenne pepper, ground pepper, sea salt, thyme, mayo, hot sauce, and lime juice. They combine to make renowned conch fritters. 
Having been first exposed to this dish when I was studying there it became one of my favourites along with the other conch dishes which I never had before. Coupled with the dipping sauce they are delicious. 

Jamaica boasts many things; escovitch fish, bammy, jerk pork, beef patties and so many others. However today I turn my attention to jerk chicken. Jerk chicken is spicy, sweet and hot. Wake up your senses with the dry rubs or wet marinade infused with scotch bonnet peppers and pimentos [all spice]. Served with other fares on the plate it makes for a truly tasty experience.
