Mango season's coming - The variety of ways we can enjoy this fruit

If you're like me, you probably know two types of mangoes - ripe and green. These are the default.  However, there are so many varieties of mangoes that come from just as many regions. Delicious vegetable dishes

  If this were a cooking show and you were given two base ingredients from which you were to develop dishes, what would they be? Well recently, I was looking on Twitter among the accounts I follow who are in farming. One of these farmers  https://twitter.com/thebajanfarmer  on this occasion what was featured zucchini and cabbage. I got to thinking about what dishes can be made with these ingredients? Can we make them diverse?   Well, I did an internet search and came up with this:  https://bit.ly/3Jv9Qa4  Here's what struck me.  These combinations can be sauteed; baked; stir-fried; roasted; and stewed.  They can be meat, vegan or vegetarian dishes with varying levels of appeal. Caribbean snacks, sauces, and dips

 Snacks! We all crave them on occasion. Like anywhere else in the world, we have them, which don't necessarily come from a storefront. Some have been crafted within our diverse history over the years. The base may have come from lands far away, however, with the adaptation of what was available within this region, treats were developed that are pretty appealing.  The snacks, sauces, and dips are not limited in their appeal since they are prepared with a variety of colours, textures, and flavours that make for an array of tastes that are seemingly limitless.  Some of these are made from fruit bases, some from nuts and grains, yet others may come from base ingredients that have been milled; making them some of the treasures of the Caribbean that would make pirates war over them.  Whether they are sugary, sweet, syrupy, savoury, salty, tart, or acidic and the list of descriptions can go on.
